Smashed Baked New Potatoes
1 bag of New Potatoes or Fingerling Potatoes
Sea Salt to taste
Preheat oven to 400 degrees
In a medium microwave dish, put 2 inches of water. Add the desired amount of potatoes (I usually do 4 per person).
Microwave on high for 6 minutes.
On a cookie sheet, arrange potatoes so they are not touching.
With a spatula “squish” the potatoes flat.
Drizzle with a small amount of olive oil and sprinkle with desired amount of sea salt (remember you can always add more when they are cooked).
Bake in the oven for 20 minutes, turning half way. They should be golden brown on each side like pictured below. If they are not add a few minutes per side as ovens do vary.
Serve as a side dish for pretty much anything or as a dipper for your favorite dip.
