4 Great Veggie Recipes That Even Kids Enjoy 5

As a kid, I had no choice but to eat my veggies or starve. Guess what? I survived. It doesn’t have to be that way though. Create these yummy and fun veggies that even kids enjoy.

Zucchini Noodles or otherwise known as “Zoodles”

What you will need for a family of four:

A Julianne peeler or spiralizer

spiralI have this one.

6 large zucchinis (it may seem like a lot but they cook down)

Your favorite spaghetti sauce. I like this one from Trader Joes.

Directions

Spiralize the 6 zucchinis and put into a microwave safe bowl.

Put 1/2 inch of water (yes, 1/2 in.)  into the bottom on the bowl.

You can eat them raw, microwaved or sauteed

Microwave on high in 30 second increments until desired doneness. I like mine crunchy, so about 3 minutes.

Drain all water and allow to sit in colander for a few minutes to avoid watery sauce.

Top with your favorite sauce and serve with garlic bread.

Sweet Potato “Chips”

What you will need for a family of four:

4 large sweet potatoes

olive oil or coconut oil

Salt 

Baking sheet

Aluminum Foil or Parchment Paper

Mandolin or sharp knife

Directions 

Slice the sweet potatoes thin (the thinner you slice, the crispier they will be)

Toss chips with 1 tbsn of olive oil or coconut oil and sprinkle with salt

Put a single layer of chips on the baking sheet which is covered with aluminum foil or parchment paper

Bake in the oven for 10 minutes, then flip and bake an additional 10 minutes for the other side

Watch the chips for the last 10 minutes, removing any that look like they will burn

Enjoy!

Butternut Squash Toast 

Genius! These pieces of toast are a great alternative to bread. This recipe is great as the little ones can help cook and top the “toast”.

What you need for a family of four:

1 large butternut squash

Peeler

Sharp Knife

Toppings 

Toppings:

Peanut Butter & Banana

Your favorite burger patty

Sprinkle of cinnamon sugar (literally mix 1/2 teaspoon of cinnamon to 1/4 cup sugar)

Eggs and bacon or sausage

Zoodles, sauce and cheese

Directions

Peel the squash

Cut into 1/4 in rounds

Turn your toaster to the highest level. Toast each round 2x on the high level.

Top with your favorite topping and serve.

Cauliflower Rice

What you need for a family of four:

1 large head of cauliflower

coconut oil

Salt & Pepper

Grater

Directions

Cut the cauli (Yup, that’s what I call it) into fourths

Over a large bowl, grate the cauli (watch out for your fingers unless you like a sprinkle of human flesh..mmm). An alternative is using a blender or food processor.

In a large frying pan, heat the coconut oil on medium-high heat

Add the cauli to the pan and press down with a spatula (don’t stir too soon, you want some crispy bits)

Stir after 3 minutes or so

Press again with the spatula (more crispy bits)

The  cauli should look slightly translucent when done, usually about 9 minutes of total fry time

Season with desired amount of S&P

Enjoy!

*This recipe is great by itself or as a substitute to any rice dish
