My quinoa salad is always a hit when I bring it to a get together. It goes great with anything, is yummy and healthy too!
3 cups of quinoa
Juice of 2 limes
1 cup of corn off the cob (you can buy canned but freshly cute off the cob is always better)
1 cup chopped cucumber
1 cup chopped bell pepper (I like the yellow ones)
1 can chick peas
2 hass avocados
1 chopped tomato (I buy what’s in season)
1 palmful of chopped cilantro
1 cup of halved grapes
3 chopped spring onions
1/4 cup of your favorite flavored vinegar or dressing
3 tablespoons of chilli lime seasoning (If you can’t find it, mix in 1 tablespoon of chilli powder and zest a lime)
Salt and Pepper to taste
In a large saucepan bring 6 cups of water to a rolling boil, add a dash of salt.
Wash the quinoa in cool water and drain.
Add the 3 cups of washed quinoa to the salted water. Lower heat to low and cover. Cook for 15 minutes string occasionally.
Strain the quinoa and place in a bowl. Refrigerate.
In a separate bowl, combine the remainder of the ingredients.
Add the quinoa to the other ingredients when it is completely cool. Mix thoroughly.
If I am serving this the next day, I put all of the chopped ingredients into separate Tupperware and combine when ready to serve. Chop the avocado right before serving to avoid it going brown.
